Luna Park Mediterranean Tuna Salad Sandwich
An extravagant indulgence, to be sure, but this is the most amazing tuna sandwich I've ever had. These were served at a bridal shower I attended and I shamelessly begged for the recipe, to no avail. Thankfully, I found it on one of my favorite food blogs, Meemo's Kitchen :)

Zoey's Healthier Fluffy Chocolate Chip Cookies
This is a healthy adaptation of my favorite chocolate chip cookie recipe so that I could eat a dozen or so of these while I was pregnant without really debilitating guilt... just normal guilt. It didn't really work out the way I wanted to (I gained 80 lbs!) but at least my monumental weight gain slowed down... Aye Yaye Yaye, Nothing made me hungrier than being pregnant! :0 These are named after my Zoey.

Chocolate Salty Balls (Levain Double Chocolate Coconut-Walnut Co
A recipe purported to be from the Levain Bakery (who has never, to my knowledge, *had* a double chocolate coconut-walnut cookie).
When I first baked these cookies, according to the recipe I'd found, I had been interrupted between the creaming butter & sugar step and the rest of the recipe, and the cookies never flattened out. We sat around gobbling them up and analyzing them. My thought-train ran thusly "Hmmm...needs salt, but not too much salt because then they'd be chocolate salty balls instead of cookies, and who wants chocolate salty balls?" Needless to say, the name stuck, and it is how we have referred to these incredibly rich and decadent cookies ever since!
I hope you love them as much as our family (and subsequently all of our guests, too!)

Spanish-Style Potato Salad
My copycat version of a potato salad from a local source-from the chef himself! Reminder: because this is a copycat recipe, all amounts of ingredients were estimated. For example, I am judicious with the amount of mayonnaise and you can most certainly add more. Use quality ingredients. Easy!

Green Eggs & Ham.... Kosher Style
My kids won't eat veggies.... but Sam I like green eggs and ham! I do! I like them Sam-I-Am! And...... the secret is chopped spinach & green food coloring for the eggs & we just substitute chopped hot dogs for the ham. Makes for a kid friendly egg scramble!!!!!

Red River Hot Cereal Mix (Copycat)
I bought a box of Red River hot cereal recently-specifically to
create a copycat version although it's been on my To Do List for a long time. All ingredients were purchased in bulk at the natural food store using Oregon-based Bob's Red Mill products exclusively including organic 'Pumpernickel Dark Rye Meal' which I was happy to discover. *Please* note that I estimated amounts for this cereal and you can adjust the amounts if you wish. The cooking directions were taken directly from the back of the box.

Ratner's Vegetable Cutlets
This easy vegetarian patty was one of the most popular dishes at the New York's restaurant, Ratner's. The recipe was printed (in 1975!) in "The World Famous Ratner's Meatless Cookbook", by Judith Gethers and Elizabeth Lefft. Recipe is Kosher for Passover. These reheat very well.

Mc Donald's Classic French Fries
Does anybody -- born before 1990 -- remember how good McDonald's french fries used to taste? It was the beef tallow they were fried in... until it was switched to hydrogenated oil because it was "healthier" after worldwide concerns about its detriments to health. When I saw a televised clip of Julia Child praising the glories of the original McDonald's french fry... pooh-poohing the controversy over the beef tallow... it raised my curiosity, and even inspired me. I immediately bought a gallon of 100% grass-fed beef tallow (it just sounded better and healthier somehow!)... and then I began my quest to re-capture the glory of those classic, vintage McDonald's french fries! I went online for pointers on preparing them with great results... and here it is for you to enjoy. Grab some ketchup... Savor the flavor... smile... and forget about your heart valves for a few moments!

Jack in the Box Classic Beef Tacos
I get a kick out of reverse-engineering recipes. I seriously enjoy the challenge -- say, from the perspective of a scientist or lab chemist -- of determining which ingredients are used in a recipe, how much of the ingredients are added, and the process that is employed to make them all come together into "the real deal". I've only recently discovered Jack in the Box Beef Tacos and I liked them immediately upon the first bite! Of course, I did my research and even pestered a few Jack in the Box employees to get as much information before attempting cracking this recipe -- since there are a few ingredients I'd never used before -- such as texturized soy protein and defatted soy grits! For best results, I recommend assembling the shells with meat filling and freezing them before frying, just as Jack in the Box does (which conditions the middle of the shells to be moister, leaving the edges crispy after frying). May you have as much fun making and eating these as I had reverse-engineering them and be sure to serve them with my Recipe #423994!
